120 degrees is too hot!! try some different oil perhaps? not sure, someone with technical knowledge should be able to point you in the right direction. I have my defi warning set at 115 and only ever hit this on track after at least 5 laps on full beans.
opposite of a loudi these are commonly known as defi gauges, they give reading of your oil pressure, oil temprature and turbo boost, there are 7/8 gauges to be had but the above 3 are the most common people have 2007 BMW M5

Thats the wrong place, it will give you incorrect readings (although probably cooler than where it should be) It wants to be in the main gallery, easily fitted with an adaptor. It sounds as though things could be a bit high TBH. First off i would try some 10/40 which should help, either Millers, Motul, or silkolene. Also try removing the undertray What is the exact spec of the rest of the car? If JP is Roland Rat, them I am Errol the Hamster... His number 1 fan.
Only changes to original spec are K&N filter and 3" turbo back exhaust the car has been road re-mapped and runs at around 344 BHP/332 Torque Oil change has only just been done and uses Millers 10-60 this has settled it somewhat it only runs 120 on a hot day rest of time it's 105-110
surely weather wouldnt make a 10-15 degrees difference?

It can do. Dat question but is your coolant getting too hot- there is a heat exchanger (modine) that attempts to cool the oil and if the coolant is hot then it will heat the oil up rather than cool it down. Try fitting a 71C thermostat - that will lower your water temperature and also your oil temps before going down the route of an oil cooler. Duncan : www.racedynamix.com
